    Try making hot sauces (fermented and not), pepper flakes, freeze some, eat some?

    Pepper jelly. You can freeze them until you’re ready to process

    I just learned how to pickle and it’s so much better than anything store bought. I would highly recommend it. I’ve been experimenting with different kinds of vinegars and they make the most difference. I’ve stopped using distilled white, moved to different types of white wine vinegars, and next will be champagne vinegars. Seemingly the more expensive the vinegar, the milder the flavor. With peppers, I wouldn’t add dill. I’ve had success with garlic, red bell peppers, peppercorns, red onion, and bay leaf.

    Are those spicy? They look a lot like the Aji Dulce peppers everyone in Puerto Rico grows(sweet pepper)

    Smoke a batch! Then grind when dry. You’ll have smoked pepper flakes.

    Cut them half, coat them in equal parts sugar, and let sit until bubbling. You’ll have probiotic lacto-fermented peppers.

    Dry some out and smash them up, then sprinkle on pizza like pepper flakes.

    Cut end off, cut in half, ferment at 3% brine (3/4 cup per 1 gallon water) then blend and cook with vinegar and spices, strain and bottle your hot sauce

    OP, I’m with you…I have ten varieties and they all did great…I’m totally daunted. Pickle? Dehydrator? Smoker?

    Whenever I end up with way more peppers than I can possibly use any time soon, I just slice them in half and dehydrate them, crush, and then fill up a spice shaker. Will easily stay good for a whole year before your next growing season.

    Some people also like to smoke them first before dehydrating, I haven’t tried that yet but it sounds amazing.

    Mix a nice hot sauce…I have an awesome recipe

  14. Cut some up, slice up purple onion, add some lime and a dash of oregano. Let them pickle for a few hours. Enjoy 🙂

    Fermentation/Canning/Dry them out, grind up & use as spice

    that’s really not that many. maybe enough for a sauce and a small jar of dried and crushed.
