We’ve been obsessed with this easy couscous salad for years! It’s truly one of our all-time favorite recipes. Everyone loves the simple lemon dressing, crisp veggies, and fresh herbs!

I’m obsessed with this pearl couscous salad. If you haven’t made it yet, you should. Trust me on this one. I make it for myself, bring it to parties, and crave it when I don’t already have it in the fridge. While the couscous cooks, make the dressing in a big bowl. It’s simple with a little Dijon mustard, honey, lemon zest, lemon juice, and olive oil. When the couscous is ready, add it still steaming hot to the dressing. As it cools down, it soaks up all that lemony flavor. Fresh herbs make this salad incredible, so I use a heaping pile. I’ve got mint, basil, and dill. Toss in chopped cucumber and tomatoes or any other fresh veggies you love. Then I always toss in some chopped walnuts and golden raisins. I’m such a fan and can’t wait for you to try it.   1. I'd use limes. I'd add finely shredded zucchini, chop the cucumbers much smaller, fennel, finely chopped dates instead of raisins, & I'd have to use garlic honey. OMG! I'm hungry now!

  2. Sounds good! Americans, i hooe you dont mind me saying bit 'heaping pile' amuses me as it makes no sense. Its a heaped spoon, pile or whatever.😅
