This is definitely a guilty pleasure meal because this chicken, broccoli, rice, and cheese casserole is full of cheese. Okay. And so I have some thin chicken breasts. I’m going to season them on both sides. On the other side, I’m just going to do everything that’s salt-free. So I decided at the last minute to just cube these up in really small pieces so I won’t have to cut them when they’re hot. So we have some olive oil in the pan. We’re just going to sear these in the pan till they’re done. But remember, they’re going to finish cooking in the oven and the casserole anyway. I’ve never used this cheese before, but I loved it. And that broccoli, no, it’s not as green as it should be because it’s been in the refrigerator a bit. I was supposed to cook this casserole last week. So, in that same pan, I added some onions and some fresh garlic with a splash of chicken broth. I’m adding two cups of heavy cream. We’re going to season it up with some Cajun seasoning. And that’s the garlic pepper that I’m talking about. We’re going to add that 8 oz of cheese. And then about a four cup of my favorite mozzarella cheese. We’re going to finish up with a four cup of chicken broth and a couple ounces of some cream cheese. Now, I’m going to add my rice to the pan. It’s cooked. I seasoned it well. We’re going to add that broccoli. No, I didn’t steam that broccoli, but that’s okay. We’re adding that cheese sauce. We’re going to mix this up and then we’re going to season it again. We’re going to put it in our baking dish. Now, I’m going to layer it with a layer of mozzarella cheese and then the rest of that chicken broccoli rice mixture and another layer of cheese. I baked this on 375 for about 30 minutes and then put it on broil. When I tell you it’s so amazing, you got to try it.

Chicken Broccoli Rice and Cheese
3 chicken cutlets
2 fresh broccoli bunches, chopped
3 cups cooked rice
8oz sharp cheddar cheese
1 1/4 mozzarella cheese
3 oz cream cheese
2 cups heavy cream
1 cup chicken broth
2 tbs butter
1 cup chopped onions
3 fresh garlic cloves
Cut chicken into bite sized pieces. Season with Pepper, Lawry’s, Cavender’s, smoked paprika, onion powder, and garlic powder. Pan sear chicken until done. Remove from pan.
In the same pan sauté onions and garlic in butter. Add a splash of chicken broth. Add heavy cream and chicken broth. Simmer. Add cheddar cheese and 1/4 cups mozzarella cheese. Melt. Add cream cheese. Stir until melted. Season with cajun seasoning and garlic pepper.
Add cooked rice, broccoli, chicken, and cheese sauce to a bowl and mix. Layer broccoli rice mixture and remaining cheese in a baking dish.
Bake on 375° for 30 minutes and broil until golden brown.

One of my top favorite meals. Mines very similar but always willing to tweak the recipe. You never know until you try it Could be better than what you've been doing prior. This is Sundays dinner. Its fast and sooo much better than "fast food". My family loves my Sunday dinner. Its this meal or steak and mac 'n' cheese. Do you have any ox tail recipes?
