Hello everyone 🌸 Thank you so much for being here I really appreciate each and every one of you Today I’m making a cozy spinach & cheese borek First, we sauté the onions until they’re soft and fragrant Before cooking, I washed the spinach thoroughly to remove any dirt I even soaked it in vinegar water at the end and now I’m draining it I don’t use this water in the garden because of the vinegar, so I discard it Once the onions are sautéed, I add a tablespoon of tomato paste and cook it well until it’s fragrant and mixed in after draining the spinach, I dry it well and cut it into large pieces Lately, so many helicopters are flying by… I wonder why 🤔 Cooking onions with tomato paste always makes oil splash everywhere Now I’m adding the spinach, but I’m not cooking it over the heat The onions and the warm pot will cook them gently I add the spinach gradually as it shrinks… I add a little salt, and then you can crumble in as much of your favorite cheese as you like mixing it gently with the spinach I have a total of 5 sheets of phyllo dough I’m going to cut them in half, making 10 pieces… and shape them into little rose-shaped boreks To brush on the phyllo dough, I mix enough milk, olive oil, and 1 egg to make a nice, smooth glaze Today the neighborhood is so lively there are lots of kids playing outside I brush the sauce onto half a sheet of phyllo dough, then add some of the spinach filling. You don’t need too much filling since we’ll be rolling it Next, fold it to make a long strip, and curl it inward to form a little rose shape my favorite boreks are spinach and potato ones I just love their flavor and texture Have you ever tried making borek at home? How did it turn out? When I was little, I used to stay home alone and try making dough and rolling out phyllo… Then I’d make cigarette borek 😄 I was so curious back then! For the last two boreks, I’m using a mix of three cheeses and parsley It’s my husband’s favorite he’ll definitely love these even more You can mix and use any leftover cheeses you have at home, even the ones in the freezer 🧀❄️ It’s a great way to finish them up! When all the phyllo sheets are used, I add one more egg to the remaining sauce and brush it over the boreks to help them turn golden and crispy. I sprinkled sesame seeds and nigella seeds on the cheese boreks The spice and spoon drawer got really messy I need to tidy it up If you want, maybe one day we can organize the drawers together Let me know in the comments what you’d like to see more of 💛 I baked the boreks at 350°F (about 180°C) for approximately 45–50 minutes ⏱️ until they turned golden and crispy We’re going to enjoy them while they’re still hot I’m making some green tea on the side, and adding a bit of rosehip tea for color 🌸🍵 We love simple, single-dish meals 🍽️ Or just putting everything on one plate and enjoying it comfortably on the couch while watching something That horn is from the milk truck On Sundays, farmers come to sell fresh milk, fruits, and vegetables I think there should also be street vendors selling wildflowers 🌸 Wouldn’t that be lovely? My husband accidentally gave me a cheese borek instead I think I like pink or red-colored teas the most 🌺 They just look so pretty and inviting It’s time to taste our boreks! They turned out so delicious we’ll be enjoying these for days! I wish I could eat them all at once But I recently found out I have reactive hypoglycemia, so I can’t eat everything as much as I want I’m trying to eat in a balanced and mindful way lately. The sun hasn’t completely set yet, and I can hear the cats outside 🐾 The kittens in my garden have grown so much! Their mom brought them here when they were tiny, and now they’re big. Seeing them grow touches my heart 💛 Feeding them every day also makes me so happy. As long as they don’t leave our home, I’ll keep caring for them.
