🌿 Niramish Paneer Curry
Ingredients:

Paneer – 200g (cubes)

Tomato – 2 medium (puree)

Ginger – 1 tbsp (paste)

Green chili – 2 (slit)

Cumin seeds – ½ tsp

Turmeric – ½ tsp

Red chili powder – ½ tsp

Coriander powder – 1 tsp

Garam masala – ½ tsp

Fresh cream or cashew paste – 2 tbsp (optional for richness)

Mustard oil or ghee – 2 tbsp

Salt – as needed

Fresh coriander leaves – for garnish

Method:

Heat mustard oil till it smokes lightly, then cool a bit.

Add cumin seeds, green chilies, then ginger paste. Sauté.

Add tomato puree, turmeric, chili powder, coriander powder, and salt. Cook till masala releases oil.

Add paneer cubes, mix gently.

Add a little water for gravy, simmer 5 mins.

Finish with garam masala + cream/cashew paste.

Garnish with coriander.

🍚 Niramish Veg Fried Rice
Ingredients:

Basmati rice – 1 cup (cooked, cooled)

Carrot – ½ cup (finely chopped)

Beans – ½ cup (chopped)

Capsicum – ½ cup (chopped)

Green peas – ½ cup (boiled)

Ginger – 1 tsp (grated)

Green chili – 1 (chopped)

Ghee or refined oil – 2 tbsp

Salt – as needed

Black pepper – ½ tsp

Soy sauce (optional, but avoid for strict niramish) – 1 tsp

Fresh coriander – for garnish

Method:

Heat ghee/oil, add ginger + chili.

Add carrots, beans, peas, and capsicum. Stir-fry 3–4 mins.

Add rice, salt, and black pepper. Mix well.
