Greek Goddess Dressing
1 or 1/2 of an avocado 🥑
1 cup of Greek yogurt full fat or low fat
1 cup fresh parsley
1 cup mixed soft leafy herbs, dill, mint, tarragon, and/or cilantro
2 tablespoons fresh lemon juice, plus ½ teaspoon zest
1 tablespoon extra-virgin olive oil
2 teaspoons capers
2 garlic cloves
¼ teaspoon sea salt
Freshly ground black pepper

Hello. I’m making the Greek goddess dressing. I just zested a little bit of the lemon. Now I’m going to peel some garlic. That takes two seconds. Maybe three. Um I’m going to do two cloves of garlic. Uh I really like the taste of garlic. I know it’s good for your insides, um bronchials, all that. So I’m going to grate one. Um I already dumped some avocado in my little cup here. We’re going to make the Greek yogurt. I believe I just got low fat this time. Um, I have some teragon, like whole teragon dried form, and I have some capers that I’m just going to roughly chop up with the garlic. I’m just going to take a spoonful of the capers and a I’m going to pour a little bit of the juice in the cup. Just a little bit. I’ll also cut up a lemon here in a second. So, just give the capers a rough chop cuz I do have a little bit of the garlic here. And I’ll put that in as well. Just garlic, capers, lemon zest. I’m going to put some juice in there. There’s no seeds. Yay. Um, it’s been kind of a hectic morning. I made jalapeno poppers. Those are turning out yummy. Show them in a second. Um, I also need to get my olive oil and salt and pepper. So, I do like to use this olive oil. So, I’m just going to glug it in there. Gug glug gug gug. And pepper, little bit of kosher salt, and some dill, which I’m going to roughly just chop off here. About a/4 cup of the dill. And like a big handful of this. Uh, actually just going to chop it. The cilantro. I’m going to put that in a little bit. I’m going to grab my Greek yogurt and I’ll be right back. So, I’m going to put about a cup, maybe a cup and a half. That’s a good 1/4 cup. That’s a half, probably more. That’s about a cup. So, I’m going to put just one last dollop in here. Half about half of it’s gone. I’m going to roughly chop my uh cilantro so the stems don’t get all caught up. I’m just going to put a little bit of the cilantro. Um and then I’m going to grab some basil and give that a little rough chop as well. And we’ll see how this turns out. I’m going to grab my I was supposed to grab this before. I think I got to put you all you guys over here. So, let me turn that down a little bit. Plug my little immersion blender in. Here we go. Ooh, that I should keep actually this on cuz I forgot I put it on broil here. Oh yeah, those are done. I’m like, I put them on for like five minutes. So, I’ll take those bad boys out. They are nice and toasted. Oh my god, look at those. The cream cheese ones are a little burnt, but that’s all right. I’m going to move the pan to the back so it really doesn’t come and accidentally touch it. Keep that fan on for a little bit. Plug this bad boy in. I don’t believe I forgot anything. If I did, we are screwed. I’m going to make a little well here. Turn this pulse it. I’m just going to pulse it. So, I don’t want to I just broke a neutra bullet recently. I should have cut my I should have cut my beautiful Oh, you know what? I forgot to put the I have um also some ground basil that I’m going to put in there and some ground teragon. I like a lot of dashes like maybe 10 or 12 dashes up and down. And I want it a little bit more green. So, I am going to add the rest of the cilantro. You just have to pick it up, tap it, give it a little tap, and then push it down. And give it a little taste. M. That’s yummy. Okay, you guys have a good day. Oh, I eat this with like I don’t know. I don’t eat it with carrots. I eat it with chicken. I like to also eat it just like by itself with chips, like a regular chip. Like a popcorn chip. I like the popcorners.
