[Music] We’re already on episode five of Healthyish. And I’ve done a very bad job of making it an obvious series cuz I’ve had like other things I wanted to say, but this one is just about the recipe. And I know what you’re going to say. This is not healthyish. This is just healthy. And I’m sorry that I want your skin to glow, but seriously, I ate this for 4 days in a row, and it’s delicious. So, we’re starting with a green Romeco. A Romeco is usually roasted red peppers and toasted nuts, but we’re starting with raw green peppers and a serrano pepper and cilantro, which makes it not very close to Romeco at all, but there are toasted almonds, so it’s heavily inspired from that. And a lot of people will say zucchini is a little watery and bland when roasted, but I really like getting it, you know, some color, getting that sweetness out of it. And I think it pairs really nicely with couscous, a ton of herbs, some canolini beans, or maybe those are kidney. Who knows? And then just seasoning that with lemon juice, lemon zest, olive oil, salt and pepper, so that the romemesco can really be like the base. I needed to demonstrate that this can both be a side dish, which is normally how I serve it. Like I serve it with this and a protein, and it makes people very happy at dinner. Or if you want to go crazy, you can just put the whole dressing in, mix it all together, and it’s meal prep. It’s very easy, very green.

  2. Just so you know all food has protein. It’s so weird to me that people refer to meat as “a protein” when fruit and veggies are protein too!

  3. I had a salad recently it was quinoa, chickpeas, butternut, courgette, peppers and red onion with a gochujang dressing. The whole time I was like, "Justine would have airfried the chickpeas for crunch, she'd have added some fresh greens. So thanks Justine😂❤

  4. This will taste very uncooked for anyone genuinely considering this for diet. It'll leave you feeling empty. Please roast the bell peppers, and other spices and cook your vegetables properly for a long term sustainable diet plan.

Look, I ate like this for the vast majority of 37 years (everything fresh, from scratch, low salt, tons of greens, lots of fish, limited sweets, very limited alcohol, etc) and I still lost my gallbladder due to stones when I was 63. I still got plantar fasciitis, I still got bad arthritic knees, off the chart weight gain after menopause, elevated blood pressure, low heart rate, etc., etc. despite decades of being thin, active and eating small healthy meals.

    I honestly believe it doesn’t matter what you eat, just eat it in moderation and don’t go crazy about being “healthy”. We all go when it’s our time to go – enjoy the ride getting there….just don’t hang your head too far out the window, eyes front and watch where you’re going, is all. If it looks good, eat it!!
