Baked or boiled, they retain more nutrients and provide steady energy thanks to their slow-digesting carbs. Prepare a bowl of water. Add the potatoes. Mix well. We need to rinse off the excess starch. Drain the water. A pinch of salt. Herb mix. Mix well. Fry for another 5–7 minutes. Remove from heat. Add the sauteed vegetables to the ground beef. Mix well. I just use my hands. And I recommend you do the same. This way you’ll really feel the texture. Hand mixing lets you feel the texture and adjust by adding a little liquid or breadcrumbs if needed. Plus, the warmth of your hands helps the meat bind slightly, which is important for patties or meatballs to hold their shape while frying or baking. Press the mixture down firmly. Now divide the meat into equal portions. I use a silicone spatula. Now take a piece and shape it into a log. Repeat again. Take a close look, friends. It’s really not difficult at all. Now place them in the freezer for 15–20 minutes. 2 tablespoons olive oil. A pinch of salt. Smoked paprika. A bit of cumin. Mix well. Stir for a few minutes. Make sure the spices are evenly distributed. Prepare a baking dish. Line it with parchment paper. Add the potatoes. Spread them out evenly. Into a preheated oven at 350°F (180°C) for 30 minutes. Take the meat logs out of the freezer. Remove the wrap. The meat is firmer and holds its shape well. 2 slices of bacon. Place the ground beef log on top. Wrap the bacon around it. Let me show you again. Remove the wrap. Lay out 2 slices of bacon. Place the meat log on the bacon. Roll it up. Repeat this step with each log. I used about 10.5 oz (300 g) of bacon. Prepare a baking tray with parchment paper. Place a rack on top. Place the meat rolls on the rack. Into a preheated oven at 350°F (180°C) for 40 minutes. 2.8 oz (80 g) hard cheese. Grate on a fine grater. I use parmesan. You can use another cheese. But the taste with parmesan is really special. By the way, did you know that Parmesan is a famous Italian cheese dating back to the Middle Ages, with aging that can last up to 36 months? Interestingly, it’s so hard and dry that it can be stored for a very long time without losing its flavor. Take the potatoes out of the oven. Sprinkle with parmesan. Sprinkle generously. Some of my potatoes are in two layers. It’s important that the bottom layer gets parmesan too. Back into the preheated oven for 10 more minutes. 1 bell pepper. Chop finely. I know not everyone likes bell peppers, but they’re incredibly healthy. They’re packed with vitamin C to boost your immune system, as well as vitamins A, B6, and fiber to support digestion. Bell peppers help reduce inflammation, improve vision, and promote healthy skin. Their bright colors signal high levels of antioxidants, which protect your cells and slow down aging. Add the feta to the vegetables. 1 red onion. Slice into half rings. Red onions are often sliced into rings or half-rings in salads not just for looks. This shape helps evenly distribute their flavor and aroma throughout the dish, and the thin layers make the onion taste milder and sweeter. Add the onion to the vegetables. Prepare a small bowl. 1 teaspoon mustard. 1 teaspoon lemon juice. 2 tablespoons olive oil. Mix well. Add the dressing to the salad. A pinch of salt. Mix well. Cabbage makes great wrappings for stuffed cabbage. Mom used to make stuffed cabbage when her mom would visit. Only time we had it. Mom was from Scranton Pennsylvania.

Watching you mix all that reminded me of mom making her steak tartare. She used to put minced onions and green peppers in it. Dad’s dad would just put in capers. Love the stuff. Grandpa always had a plate and crackers for it. He introduced us to it. Doesn’t bother me it that it’s raw hamburger mixed with an egg, salt, pepper capers or onions or peppers. Mixing it by hand is fun.
