    Fresh basil? Can’t do taste test but the viscosity looks great

    Based in the recipe you shared in another comment;

    1. Use high quality whole tomatoes rather than crushed tomatoes. If you don’t have access to good fresh tomatoes, you can most likely find canned san Marino tomatoes in the supermarket.

    2. Let the onion sauté in olive oil on medium-low heat for 10 min before adding garlic and tomato paste. Toast the tomato paste before deglazing with some white wine.

    3. Add tomatoes and let them simmer for at least 30 min. You might want to remove the skins of the tomatoes before adding them in (easy if you put them in boiling water for a few seconds)

    4. Too with toasted black pepper, Parmeggiano and fresh basil 🙂

    Looks like pasta might be a little overdone. You might try something other than passata for the sauce, something to add a little body to it. Some pieces or maybe some sun dried tomato.
