Today we shall be making sulaki, the quintessential Greek street food. I grew up eating this, both the pork version and the beef version. Choose to your heart’s desire. Start by cutting up a pound of beef loin. Generously salt and pepper and add oregano. Rub the oregano between your fingers to enhance the flavor as you sprinkle on top. Drizzle plenty of extra virgin olive oil until it’s well coated. Add half a fresh squeezed lemon. Thoroughly mix it all together. And don’t be concerned about measurements. The Greek way is to eyeball it. Thread your skewers with four or five pieces of meat, about 2/3 of the stick in length. If you’re going to grill your sulaki outside, make sure to soak the skewers in water for an hour beforehand so they don’t burn. Marinate your meat in the fridge for a few hours, preferably overnight. You will notice that the meat changes color, but that’s perfectly normal. It’s just the lemon reacting to tenderize the meat. When ready to prepare your sulaki, take out of the fridge and let it come to room temperature for about half an hour. Now, it’s time to grill. Get your grill nice and hot to at least 400° temperature. Add extra marinade as you’re cooking. Make sure to frequently turn over so it doesn’t burn and cooks thoroughly.
