Mediterranean Baked Salmon 🐟

Ingredients (4 servings)
• 4 salmon fillets (about 5 oz each, skin on)
• 3 tbsp extra virgin olive oil
• 3 cloves garlic, minced
• 1 lemon, thinly sliced (plus extra for juice)
• 1 tbsp fresh dill, chopped (or 1 tsp dried)
• 1 tbsp fresh parsley, chopped
• ½ tsp paprika
• Salt & black pepper, to taste

Optional sides: roasted vegetables (zucchini, eggplant, bell peppers) or a simple arugula salad.

Instructions
1. Preheat oven to 400°F (200°C).
2. Place salmon fillets on a parchment-lined baking sheet.
3. Drizzle with olive oil and rub garlic, paprika, salt, and pepper over the fillets.
4. Top each fillet with lemon slices and sprinkle with dill and parsley.
5. Bake for 12–15 minutes, or until salmon flakes easily with a fork.
6. Squeeze fresh lemon juice on top before serving.
