Today I have for you a super easy keto lemon bar recipe. We start with an almond flour crust, which is almond flour, sweetener, and melted butter. Press it into a casserole dish or a cake pan. Then we’re going to make our filling. Our crust needs to bake in the oven separately from the filling. The filling is delicious and lemony and super easy to make. We bake it in the oven and there you have it. Delicious keto lemon bars.

  1. For the crust:
    • 2 Cups almond flour (see my favorite on Amazon).
    • 6 Tablespoons Butter, melted
    • 3 Tablespoons sugar free powdered sweetener
    For the filling:
    • 4 Large Eggs, beaten
    • ½ Cup sugar free powdered sweetener
    • 1 teaspoon xanthan gum
    • ½ Cup Fresh lemon juice (about 2 lemons)
    • pinch of salt

    Instructions
    For the crust:
    1. Preheat the oven to 350F and grease a 9×9 baking dish.
    2. Combine the almond flour, melted butter and 3 tablespoons of powdered lakanto sweetener in a large bowl.
    3. Pour the crust mixture into the casserole dish and press in with a flat bottom cup.
    4. Bake in the pre-heated oven for 20 minutes or until golden brown.
    5. Remove from the oven and set aside.
    For the filling:

    1. Combine the eggs, powdered sweetener, xanthan gum, lemon juice and salt.
    2. You want the mixture to be completely smooth so you can blend it in a blender or use an immersion blender.
    3. Pour this mixture on top of the crust and cook in the
    oven for 15 minutes more.
    4. Remove from the oven to cool for 10 minutes.
    5. Sift a little extra powdered sweetener over the top and cut into 9 squares.
    6. Serve.
