I have to turn into soup or sauce. Ideas? Thinking of: tamoto, sambucca soup. I don't have clams to go the route of the clams and clamato route…. Could use some ideas….

    Ive made a concentrated ceasar slush, then served fresh shucked oysters on the halfshell with it.

    We made a killer caesar out of clarified agar clamato. If you guys run fancy like that, it’s super fun.
    Also, as a Canadian who has fucked with tons of Caesar, and assuming you are not Canadian you need to try…

    Caesars with gin.
    Really spicy Caesars with port added.
    Caesars with almost too much Worchestershire.
    Caesars with bacon infused vodka.
    Too much lime.

    All these Caesars have a wonderful and different personality, and might need to be done in a flight.

    The [Clamato website](https://www.clamato.com/en/recipes) has their own recipes (under the cocktails/virgin drinks) including a marinade, various seafood tacos, a crema dip (that pairs with a dish), and a few rice dishes.

    Why do I have to get rid of it? Why no staff party with ceasers and fun things… Well we have closed up for the season. (Seasonal business, we close up for the winter) Staff have left for school. Now I sit here all alone. Making soups, sauces, spice mixes and such for retail products for a store, and cleaning the buildings.

    This is going to sound weird but I promise I’ve been in exactly this scenario and discovered that clamato works shockingly well in Asian marinades if you up the heat and aromatics

    The tomato element almost just becomes a “sweet” factor and the clam shit works in the funkiness vein of like… Fish sauce or some fermented goodness

    Clamato, ginger, lemongrass, lime, and bird eye chilis make a surprisingly phenomenal marinade

    I would imagine you might be able to see how a “surf n turf birria” or something would turn out if you wanted to expand on that experimenting

    If they best by date isn’t until next season then just give them to the owner to store till then. Other wise take them with you and hit up any bar managers you know who will buy them off you at a good price for both of you. I once ended up with 15 gallons of ranch, long story, and I sold it to a local wing place.

  21. Take a china cap and set it over a sink and line it with cheese cloth. Gently pour each bottle through down the side of the strainer and make sure it doesn’t pull the cheese cloth in.

    Discard the cheese cloth and put the strainer through dish.

    If you make tomato soup make sure you let people with shellfish /mollusk allergy aware 😭 as much as I’d love to die eating tomato soup.

    It’s great in ceviche, but you’ll have to make a lot of ceviche.

    Add sherry vinegar. Serve it in shot glasses as a gazpacho with a few canapés as an appetizer.
