I’ve been mixing up my meals with different cuisines and styles of cooking. This week is the south Indian stir fry poriyal. So flavorful healthy and good!

Ingredients
Oil – Options: ghee, coconut oil, mustard or any neutral high smoke point oils. I had grape seed oil so I used that
Spices – Mustard seed, dried red chilies, curry leaves (I used lemon leaves), coriander, turmeric, cumin, salt
Veggies – Chopped or shredded Cabbage, green beans, carrots, bell peppers, onions + coconut (fresh, shredded or desiccated), optional coconut milk
Protein (optional) – I used tofu
Stir fry instructions – Heat wok or pan with oil – Add spices and temper – Add protein (I used tofu coated with corn starch and baking powder) – Afterward, add more oil and spices and temper again – Add onions – Add veggies – Stir in coconut (and optional coconut milk) towards the end – Serve
