Hi. So, pumpkin season started. That’s why I made this butternut roto today. Look at the color of this beauty. I cut up some onions and the squash. And then I fried everything up. Some butter and olive oil, some salt and pepper, of course. I also toasted some walnuts for topping. And I caramelized those figs to add a little sweetness on top. Uh yeah, the roto is just cooking in the background. Don’t forget to stir and plate up with some cheese. Yummy, yummy.
