  1. Sun-Dried Tomato Cheddar Focaccia
    Grilled cheese + tomato soup in one golden loaf.

    Dough:

    3 cups flour

    2 tsp instant yeast

    1¼ tsp salt

    1¼ cups warm water

    ¼ cup olive oil

    1 cup shredded cheddar (divided)

    Filling:

    ¼ cup sun-dried tomatoes in oil

    3 garlic cloves

    ¼ cup softened butter

    ½ tsp dried basil

    Salt & pepper to taste

    Finish:

    2 tbsp melted butter

    1 tsp dried parsley

    Method:

    1. Mix dough ingredients until shaggy. Rest 30 mins.

    2. Stretch once, add ½ cheese, stretch & fold 2–3x. Rest 30 mins.

    3. Add remaining cheese, stretch & fold 2–3x.

    4. Press dough into greased 9×13 pan.

    5. Blend filling to a paste. Spread half on dough.

    6. Fold bottom third up, spread rest, fold top third down.

    7. Rise 1 hr. Top with oil & more cheese.

    8. Dimple & bake at 365°F for 40 mins.

    9. Brush with melted parsley butter while warm.
