½ cup coarse spring salt or flake salt
1 cup finely chopped fresh herbs

culinary rose petals + thyme
dill + parsley
chive blossoms + lemon zest
DIRECTIONS
1. Mix the finely chopped herbs with the salt.
2. Spread the mixture onto a sheet pan lined with parchment paper.
3. Let air dry (out of direct sunlight) at room temperature for 2 to 4 days, stirring every 12 hours.
4. When ready, rub the mixture between your hands to break up any clumps.
5. Store in an airtight glass container. For optimal flavor, use within 6 months.
USING DRIED HERBS OR FRUIT
2½ tablespoons coarse spring salt or flake salt, divided
FAVORITE FLAVORS
1 tablespoon freeze dried fruit (blueberries, raspberries, etc)
1 tablespoon dried rose petals or other herbs
1 teaspoon dried lemon peel
DIRECTIONS
1. Place the chosen flavoring into a coffee or spice grinder and pulse two times.
2. Add 1 tablespoon of the salt and pulse two more times.
3. Add the last ½ tablespoon of salt and pulse once to combine.
4. Store in an airtight glass container. For optimal flavor, use within 6 months.
