Quick & Easy Buttermilk Pancakes with Strawberries

Ingredients:

2 cups buttermilk

2 eggs

Β½ cup sugar

1 tsp baking soda

2+ cups all-purpose flour

1 cup fresh strawberries, chopped (optional: more for topping)

Butter or oil, for cooking

Instructions:

1. Mix Wet Ingredients: In a large bowl, whisk together buttermilk, eggs, and sugar until smooth.

2. Add Baking Soda: Stir in the baking soda until fully combined.

3. Incorporate Flour: Gradually add flour, 1 cup at a time, mixing gently by hand until a smooth, thick batter forms.

4. Fold in Strawberries: Gently fold the chopped strawberries into the batter.

5. Cook Pancakes: Heat a non-stick skillet or griddle over low/medium heat and lightly grease with butter or oil. Pour batter onto the skillet (about ΒΌ cup per pancake). Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.

6. Serve: Stack pancakes on a plate, top with more fresh strawberries, sourcream or syrup, or a dollop of whipped cream if desired.
