High Protein Stuffed Pepper Soup

Ingredients:
2 lbs lean ground beef (97/3)
3 bell peppers, diced
1 white onion, diced
1 tsp salt
1 tsp pepper
1 tsp Italian seasoning
2 tbsp Hunts tomato paste
1 (15 oz) can Hunts tomato sauce
2 (14.5 oz) cans Hunts fire roasted diced tomatoes, undrained
2 (16.9 oz) container Kettle & Fire bone broth ( I used 1 regular and 1 low sodium)
1 cup uncooked rice (I used Jasmati)
1 (7 oz) bag Kraft fat free cheddar cheese

Directions:
1. Dice 3 bell peppers and 1 onion. Set aside.
2. In a large pan, add 2 lbs of lean ground beef.
3. Season with salt, pepper, and Italian seasoning.
4. Add the diced onions and peppers to the pan. Stir until well combined.
5. Once the beef is browned, add:
• 2 tbsp tomato paste
• 1 can tomato sauce
• 2 cans fire roasted tomatoes
• 2 containers bone broth
• 1 cup uncooked rice
6. Stir until all ingredients are evenly combined.
7. Cover with a lid and let simmer for 15 minutes, or until the rice is fully cooked.
8. Once rice is cooked, top with fat free cheddar cheese.
9. Serve immediately or store in the fridge/freezer.
