A little sweet, a little tangy, a little spicy, crispy on the outside, but soft on the inside. If you’ve ever been to a Syrian restaurant or a shawadma shop, you know exactly what this red pepper bread is about. Chances are you probably already have all the ingredients to make this at home. But the only downside is that once you make it for your family, you will be expected to make it every single time you guys have a barbecue. So, start with the sweet or mild red pepper paste. And to that, we’re going to add a generous amount of pomegranate molasses and olive oil. And then for seasoning, I’m adding salt, pepper, Aleppo pepper, some cumin. Sometimes I add coriander as well, and some spice. Give it a taste for seasoning. It should be tangy and sweet right now. It shouldn’t taste too spicy because after you heat it up on the grill, then it should taste spicier because apparently the high temperature activates the chemical reaction inside the peppers which makes them spicy. Don’t quote me on that, but it’s real. Look it up. Like it’s always so much spicier. I always put like a little bit of heat and I think it’s perfect. And then I grill it and then it’s burning my tongue off. Grill it to your preferred dness. I like it extra crispy. And then serve it with your kebab or any grilled maids and some baywas. Red pepper bread for bbq
Khobez muhammara
1/2 Mild Red pepper paste
1/4 cup Pomegranate molasses
2 tbs (maybe more to thin it out) olive oil
1 tsp Cumin
1 tsp Coriander (optional)
1/2 tsp 7spice
1-2 tbs Aleppo pepper
Salt
Black pepper
Optional:
Finely diced onions
Chopped parsley
Mix everything well, taste and adjust seasoning, and sweetness to your liking
Rub a thin layer onto loaves of unopened pita bread until you run out. Place each 2 loaves on to eachother, sauce side facing each other. Grill on both sides until toasty, then pull the 2 loaves apart OR cut into triangles and serve with BBQ.
