Ingredients
1 pound of breakfast sausage
2 cups of shredded sharp cheddar cheese, separated by a cup each
1/2 bag of frozen tater tots
2 tablespoons butter
2 tablespoons of al purpose flour
1 cup of milk, whole or 2%
1/2 tsp salt or per taste
1/4 tsp ground pepper, or per taste
garlic pepper per taste, optional

Instructions
Preheat oven to 350 degrees
Brown sausage in oven ready skillet, cast iron preferred
Set aside browned sausage
Prepare cheese sauce in medium saucepan.
Melt butter over medium-low heat, add in 2 tablespoons of flour, mix well.
Cook over medium heat till mixture is brown in color.
Add in one cup of milk, whisk mixture together until smooth and slightly thickened.
Add in salt, pepper and garlic powder. Add in 1 cup of shredded cheese and cook over medium to medium low heat until fully melted. Remove from heat once melted
To layer the casserole, top sausage with tater tots- make sure to layer and not have tots on top of each other. Cover taters with cheese sauce. Top with remaining cheese. Cook in oven for 30-40 minutes, until dish is bubbly and cheese is melted. Let cool for 5-10 minutes

All right. So, we got it topped with the cheese and the breakfast casserole is done. And there you have it. So, this is just an easy throw together um breakfast casserole. It’s something a little different than maybe what you’re used to. So, let’s go over the ingredients that will be needed to make this breakfast hash brown casserole. I’m using breakfast sausage. Um, these are already obviously in the um they’re already in patties, but you don’t have to use patties. You can use the um already grounded up breakfast sausage to make this dish. Um I’m just going to crumble this one up. I didn’t have any of the roll breakfast sausage, so I’m going to use this um for the um obviously tater tots. Um, for the cheese sauce that we’re going to make, um, we’re going to need some sour cream, some milk, garlic powder is optional, but I like to add a little bit of garlic powder, um, some butter, some allpurpose flour, some either sea salt or kosher salt is fine, and we’ll need some cheese for the cheese sauce. will also need additional cheese to spread on the top. Um, I didn’t take that out of the fridge. So, we’ll need two. We’ll actually need two of these. So, these are the ingredients that is needed. So, let’s get started. I’m heating a cast iron skillet over medium um high heat. I’m going to add just a little bit of oil to this. Here we go. [Music] And I’m going to go ahead and add on the breakfast patties. Again, you can use the already um grounded up breakfast sausage. Like I said, I’m just using these because this is what I had in my fridge. And I’m all about utilizing what I already have. And I’m just going to crumble these up. I can get all these in here. Find a way to make it work. So, we’re just going to brown brown these. Let me see if I can go ahead and start crumbling this up. Oh, look at there. I can. This right here equals to about a pound. So the same amount that comes in the rolls, this is about the same amount. One pound of breakfast sausage. [Music] sausage meat is completely brown. I’m going to set this to the side and we can get started on our cheese sauce. Um, just to note there, I did not drain this or anything. As you can see, there’s hardly any any grease in here. Not breakfast sausage is not typically the same like ground beef or anything. It doesn’t have a lot of um a lot of uh fat that you have to to drain off. So, with that being said, I’m going to set this aside and get started on the cheese sauce. Getting started on my cheese sauce. Go ahead and preheat the oven to 350. And let me move the camera down for the sauce. Got the um medium saucepan. Add in two tablespoons of butter. Going to cook this over medium medium heat. While I’m waiting for this butter to melt, go ahead and get my 2 tablebspoon of flour ready. Added in my 2 tablebspoon of allpurpose flour. We’re just going to let this flour and butter mixture cook for about a minute. We want it to get slightly brown. You see it’s browning a little bit. That’s what we want. We don’t want it burnt. We just need it nice camel tan color. So, after it turns slightly brown, I’m going to add in the milk. That’s one cup of milk. 2% or whole milk is fine. I think I’m going to get a whisk for this. Yeah, we want to whisk this. You want to whisk it cuz you don’t want any lumps. Just going to continue to whisk this till the mixture has a like a smooth consistency. It needs to thicken up just a little bit. Right now it’s still um a little it’s a little too thin. So it just needed to thicken up a bit. It’s thickened up to a good consistency. So I’m going to add in the sour cream. Now this is 1/4 cup of sour cream. Turn the temperature down a bit. Definitely want to get all the sour cream out. Go ahead and add in my seasoning. So this is the the salt, [Music] garlic powder. I didn’t mention black pepper, but I am going to add just a little bit of black pepper to it as well. Okay. And now I’m going to go ahead and add in the cheese. I have the shredded cheese. That’s for me to top it with. So, I’m going to use my sharp cheddar cheese slices that I had left over um for some hamburgers that I made. I want this to go to waste. So, I figure, you know what? I’m going to use these instead. I’m just going to let this melt on low. [Music] And one more. There we go. Of course, it would be a lot easier to melt if they were if it was shredded, but again, I’m all about utilizing what I have put in my fridge. So, I’m using the cheese slices. Most of the cheese has melted down. I say I’m melting this over low heat and it’s melted down pretty good. There’s a few little um little chunks, but that’s actually okay. We actually want that. It It tastes great in the casserole. So, I’m going to set this aside and we’re going to start to build our breakfast casserole. So, I started out with the breakfast sausage. Now I’m going to add the the um tater tots to the top of the breakfast sausage. And then we’re just going to pour the the cheese sauce over it. And we’re going to top top with cheese. There we go. Now we’re going to chop top it off with the cheese sauce. We’re just going to just get into the nooks and crannies. All right. So, now we’re going to top it off with the cheese. Now, this is a very versatile um breakfast casserole. You can if you wanted to add scrambled eggs to it. Actually, you can just add um some you can have add scrambled eggs that’s already cooked or uncooked. You just add it to the sausage and then top it with the tater tots and the cheese sauce. It cooks up perfectly. Um you can add vegetables, mushrooms, tomatoes, onions. I mean the the sky’s is the limits. So it is a very versatile dish. You can’t make it um yeah it’s just it’s just versatile. All right. So, we got it topped with the cheese. And now we’re just going to cook this in the oven for about about 45 minutes till it’s golden. Golden on top is bubbling. It’s been 45 minutes and the breakfast casserole is done. may have cooked it a little longer than I probably should have, but nonetheless, it is completely done. It is ready to serve. Actually, we might want to let it cool down for a few minutes before we actually serve it. So, we’re going to let it cool for a few minutes before putting this on the plate. Casserole has cooled for about 10 minutes. So, we’re going to go ahead and scoop some of this on the plate. There’s the steam coming off. And there you have it. So, this is just an easy throw together um breakfast casserole. It’s something a little different than maybe what you’re used to. So, there you go.
