Easy Creamy Shrimp Orzo

Ingredients
1/2 cup extra virgin olive oil or enough to cover the bottom of the pan
1 small onion
4 cloves of garlic
2 medium size tomatoes
1 tablespoon of tomato paste
2 1/2 cups of orzo
4 cups of chicken broth (add more water or chicken broth) if needed
2 tablespoons of salted butter
2 pounds of shrimp (remove peel and devein)
1/3 cup of fresh chopped parsley
Salt & black pepper for seasoning

5 to 6 servings

1 cebola pequena
4 dentes de alho
2 tomates médios
1 colher de sopa de extrato de tomate
2 1/2 xícaras de orzo
4 xícaras de caldo de galinha (adicione mais água ou caldo de galinha) se necessário

2 quilos de camarão (retire a casca e as veias)

[Music] Hi everyone, welcome. I’m Nancy Gano and today I’m going to show you how to make my shrimp orzo dish. A very versatile dish um in the sense of you can add orzo to anything, chicken, meat, um shrimp, in this case, fish. It’s very delicious uh goes great with anything and uh very easy to make. And that’s what I’m going to make today. I’m going to make shrimp or for dinner. I’m going to bring you along and show you how to make this recipe step by step. And I’ll also list these ingredients that I’ll be using for this recipe um in the description box down below. And I’ll also mention the ingredients quantities uh as I go along making the recipe. So stay with me and watch how to make my shrimp or step by step. Now I’m going to get started with the first step by heating up my pan. I have a deep dish uh uh pan here. And then I’m going to add extra virgin olive oil. And I’m going to cover the bottom of the pan with the extra virgin olive oil. So I’m going to let that warm up a bit and then I’m going to start adding the ingredients. Okay, I’ve had the olive oil warming up. I’m now I’m going to add one small onion that I’ve chopped. I’m going to just wait until they soften a little bit. Okay, the onions have been going here for about a minute. I don’t want them to brown. Just soften. And now I’m going to add the garlic. I have four cloves of garlic finely chopped. So I’m going to add that in. All right. Now I have the onions and the garlic in there. For the next ingredient, I’m going to add two tomatoes. And I’ve chopped the tomatoes. They’re juicy and very ripe tomatoes. So it’s perfect for this recipe. So I’m going to throw them in here. I’m going to let the tomatoes cook down, absorb the flavor of the onions and the garlic. Of course, the olive oil as well. We’re going to let this cook down for a bit. Few minutes. The tomatoes have been cooking uh for about 2 minutes or so, almost three. Um now, at this point, I’m just going to add uh a little bit of tomato paste. I’m going to add about a tablespoon of tomato paste. Just fill up the tablespoon. Throw it in. Mix that in. It’s going to give it some color along with the tomatoes. I just want the tomatoes to cook down a little bit more, get a little bit more softer. Going to season this as well. So, I like to season it as I go. So, for this one, I’m going to add about I would say a teaspoon of salt. And you can season it to your liking. So, that’s about a teaspoon. And I’m also going to add some black pepper. About half a teaspoon. There we are. Okay. So, this has been going for about 4 minutes. And what I do is I like to mash up my tomatoes. Okay. So, this has been cooking for about 7 or 8 minutes. You can see that it’s reduced. It the sauce is thick tomato sauce. You can even just get some bread now and just dip it in there. Oh, it’s just perfect. It smells so good. Next, I’m going to add about two and 1/2 cups of orzo. And this is what orzo looks like. That’s orzo pasta. I’m going to throw it in. I’m going to lower the heat. I’m going to give it a mix. Just let it absorb into the tomato, the olive oil, the garlic. Just want to mix that all in. Give it all some color. And next, I’m going to add about four cups of chicken broth. Now, I’m going to let this cook and get the orzo cooked in there. Don’t worry, this is going to thicken up. Now, I’m going to let this uh come to a simmer and once it does, I’ll show you the next step. Okay, it’s been about 3 minutes since I added the orzo and you can see that it’s thickening up and the tomato sauce is being absorbed by the uh orzo. Now, at this point, what I’m going to do is I’m going to check it for seasoning. I’m going to lower the heat. Okay, the orzo is not quite cooked yet, but it can use a little bit more seasoning. So, at this point, what I’m going to do is I’m going to add 2 tablebspoon of butter. I’m going to mix that in. Melt in the butter. And I only add the butter once the orzo is almost cooked. Not quite, but almost there. Okay, I’ve added in the butter. It’s going to add some creaminess. Oh my gosh, this dish is looking so good. All right, now at this point, I’m going to add the shrimp. And uh I’m going to add the shrimp when the orzo is almost cooked. So I have about 2 lbs of de vained de vained uh shrimp and I’m going to add that in. I added a little bit of salt to the shrimp before I added it in. So I’m going to mix in the shrimp. Let that cook. Now, if you need to add a little bit of uh chicken broth or if you want to add water, you can. You just need about few minutes for the shrimp to cook. Okay, I’m going to give that a mix. And now I’m also going to add about/3 cup of fresh chopped parsley. Add that right in here. Give that a stir. All this dish is coming together so nicely. Now, you can also add some chili flakes. I like a little spice to my uh shrimp orzo. I’m not going to because my youngest daughter is not a big fan of spicy food, so I’m going to take it easy. But you can add some chili flakes or uh sometimes I add a Portuguese h pepper sauce, pimento muita. Um that all depends on you. If you want to add some spice, go ahead. Like I said, you can add the chili flakes. It tastes amazing. All right, this is almost there. I’ve had the shrimp cooking here for about 2 minutes now. At this point, I want to give it another taste. I want to make sure it uh is good for seasoning, which I’m sure it is. I just want to see if the orzo is cooked. M. Oh my gosh, guys. The seasoning is perfect. This just tastes so good. What a beautiful dish. and it comes together so easily and quick. All right, I’m gonna give this another minute and then it’s ready to serve. Okay, so it’s been about 3 and 1/2 minutes since I’ve added the shrimp. I’m going to turn off the heat at this point. I’m going to give this a mix. Um, and you know what? Even if the orzo is almost like an al is al dente, that means it’s not quite cooked. While it’s sitting here in the heat, it’ll be cooking. So, what I normally do is I just let it sit here. I place a lid on it. I set it aside off the burner that I was cooking it from and then, you know, set the table and or just, you know, call everybody to the table, dinner table and, you know, serve it. But you want to serve this as soon as you make it. And it’s a very simple, versatile dish. And I really hope you guys give this recipe a try. It’s super easy, mouthwatering, delicious, and a great dinner idea. All there’s left to do is to dig in. Hot. So good. Shrimp. Wow. You can’t stop. This is really, really good. Some fresh bread dipping in. Amazing. Now, we have a family of five, and this will serve everyone here at home. It’s good enough for five. There’s a little bit extra. Well, I guess my husband’s taking it for lunch tomorrow. I’m sure he will. This is a super delicious dish, and I hope you all enjoyed my shrimp orzo recipe.   2. This is a typical Portuguese dish. We call this "arroz de camarão" with the difference being we use rice instead of orzo. Nancy used her imagination and improvised here. Bravo Nancy, seguramente também uma delícia.
