When you want an easy, healthy, family-friendly dinner that basically cooks itself, my sheetpan chicken schwarma with cauliflower is the one. Juicy spiced chicken, caramelized cauliflower, and a creamy harissa yogurt sauce that takes it over the top. I’m starting with boneless chicken thighs. They go into a quick marinade with Greek yogurt, lemon juice, garlic, and some warm shwarma spices, paprika, cumin, coriander, turmeric, and a touch of cinnamon, which is the secret ingredient. The yogurt not only makes for the most tender chicken, but it also adds a little boost of protein. While the chicken’s marinating on a sheet pan, I’m going to add cauliflower. Toss it in a little bit of olive oil and the same spices so everything roasts together and the flavors mingle.
