Gorge, gorge, gorge. This is really good. So, these veggies were part of my recent farmers market delivery. I have Suno tomatoes, zucchini, garlic, as well as onions. So, I’m assuming that they wanted me to make some Suno and zucchini pasta for dinner tonight. At least that’s what I’m planning to make. The tomatoes look so gorgeous. And now that these are washed, I’m going to slice them in half. And then for the zucchini, I want to shred this. And I’m just going to dice these. Now, for the garlic. So, I just salted my pasta water. Add in some bukatini pasta. And now it’s time to make the sauce. Going to add a generous amount of oil in here. Add the onions and add the garlic. And just let those cook down. Now for the tomatoes. Now I’m just smashing the tomatoes a bit. About to add in that zucchini. I added some salt. Now I’m going to go in with some black pepper. If I had some sort of cream, I will add that in here. But I don’t have any. I do have some coconut milk. So, I think I’m going to add a little bit of that in here along with a little bit of dairyfree parmesan. Now, for the pasta, and I’m going to add basil in here as well.   4. Looks so good! A bit more of an "authentic" Italian approach would be to add some good quality olive oil and pasta water instead of coconut cream. The emulsion makes it super creamy πŸ™‚
