I’ve yet to find a store-bought Caesar dressing that tickles my fancy. So, here we are. Grab two egg yolks, put them in a bowl, and whisk in your oil. Now, you’re going to want to add your garlic, anchovies, and brown mustard. I also throw in some worers sire sauce, lemon juice. Give it a quick whisk, and then toss in the cheese. Finish with salt and pepper. You could also run this through a blender or something to get it more creamy, but I like it chalky. This was an instant upgrade to my viral Caesar toast boats, and I can’t recommend it enough. Full dressing recipe down below.

  1. Homemade Caesar Dressing
    .
    2 Egg Yolks
3/4 Cup Olive Oil (1/2 Cup for extra thick)
3 Anchovies Filets, mashed into pasta
3 Garlic Cloves, mashed into pasta
    1 Tbsp Lemon Juice
    1/2 Tbsp Worcestershire Sauce
    1 Tsp Brown Mustard
3/4 Cup Finely Grated Parmesan Cheese
    1 Tsp Salt & Pepper
    .
Whisk egg yolks in large bowl. Whisk in oil slowly, making sure to emulsify while doing so. Once oil is added, add in anchovies, garlic, mustard, lemon juice, Worcestershire sauce, and mix. Add cheese, mix, and season with salt & pepper. Blend for a smoother dressing, I think it thicker! Enjoy!
