Hey, Anna here. If you love the look of this antipesto oro salad, it is one of the brand new exclusive recipes in my cookbook. Today, I’m going to show you how I make it. First up, add your butter and also to a pan, stirring until golden. Then add the chicken stock and simmer. To make the dressing, it is olive oil, white wine vinegar, lemon juice, sugar, garlic, herbs, and pepper. Give it a shake and then set aside your orzo on a tray to cool. And then the very best bit, all of the additions. You’ve got sundried tomatoes, salami, and these gorgeous Spanish olives from Fraata. They are so juicy and plump and perfect for the salad. Then dice up some roasted red peppers and add back in the cooled orzo. Then to that add about 2/3 of the dressing and then chill to infuse the flavors. And then when you’re ready to serve, we’re going to add a few more things to finish this delicious salad. The first thing is some rocket. Just tear that up so it’s a little bit finer. Then most of your cherry tomatoes, most of the basil, and then almost all of the feta. Just crumble that through. And then pour over the remaining dressing. And give that a gentle stir. And then we’re just going to garnish with these remaining little bits and pieces. So I’m just finishing this off with a little bit of basil. I hope you love it.
