Tomato Soup.. not out of a can πŸ…πŸŒΏπŸ”₯

Felt right to kick off the first day of fall with a soup recipe and let me tell ya… Once you have Homemade Tomato Soup you’ll never go back… so delicious & easy to make! Serve this up with a nice grilled cheese, I promise you won’t regret it!

FULL RECIPE ⬇️

INGREDIENTS (2-3 servings)
Tomato Soup
– Extra virgin olive oil
– 5 medium sized vine tomatoes
– 1 medium sized yellow onion
– 1 shallot
– 8-10 cloves of garlic
– ~2-3 tbsp fresh rosemary
– ~2-3 tbsp fresh thyme
– Salt & Pepper to taste
– 1/2 cup of heavy cream
– 1/2 cup milk of choice
– 1-2 tsp of cane sugar
– ~1/2 cup shredded parmesan
– Fresh chopped parsley for garnish

Grilled Cheese
– Sourdough
– Pepper jack
– Bacon
– Shredded white cheddar
– Butter

Note(s): Measurements are estimated, taste and adjust ingredients to your personal preference.

DIRECTIONS
1. Cut up the tomatoes, onion and shallot into quarters. Place them all on a greased baking sheet along with the garlic cloves and herbs. Season generously, drizzle with olive oil and give it all a good mix.
2. Roast at 425Β°F for ~35-45 minutes or until veggies are soft and slightly charred.
3. Place roasted veggies in a blender along with heavy cream, milk and sugar. Blend until smooth.
4. Pour into a pot over low heat then add in the parmesan and any additional seasonings if needed. Mix and let simmer for ~10 minutes before serving.
5. Add to bowl, top with a drizzle of heavy cream, fresh cracked pepper, & parsley then ENJOY! πŸ™ŒπŸ»
