Let’s make spinach and feta burk with homemade pastry. Mix the salt into the flour. Add warm water and olive oil and stir until combined. On a well flowered surface and give it a knead for about 5 minutes till the dough is smooth and supple. Shape the dough into a log. Cut into six pieces and then roll each piece out into a ball. Coat each ball in oil. I used olive. Cover and rest for a minimum of 1 hour. While the dough is resting, mix all your filling ingredients together and set aside. Take a piece of dough out, flatten it in the oil, and roll it out as thin as you can. Sprinkle some more oil on top and start stretching it out very gently using the underside of your hand. Stretch upwards and outwards making your way around the dough. Don’t panic if you get any small holes. Carry on and trim off the edges. They’ll just go hard when baking. Roughly divide the filling into six portions. Spread the filling about an inch away from the edge and roll it out. Trim off the end if it’s a bit thick and then roll it out into a spiral. Add it to your baking dish and then repeat the filling and the rolling with the other five pieces and spread them around the spiral. Melt your butter and brush across the top of the pastry, making sure to get in all the nooks and crannies. Once it’s baked, you can spread some more butter on it. The full recipes in the caption.
