We start by sautéing chopped MUSHROOMS in butter with garlic, white pepper, and salt till golden brown. A little homemade VEG STOCK adds depth. The soup is thickened with a silky-smooth BÉCHAMEL SAUCE made using milk, crushed black pepper, and flour, gently whisked to form a creamy base.
Once blended (just a few pulses for that chunky bite), the mushrooms are folded into the béchamel sauce with more stock, nutmeg, and fresh cream. Final touch – chopped parsley for that fresh herby finish!
Ingredients used
• 150g mushrooms
• 1/4 tsp butter
• 2 garlic pods, chopped
• 1/4 tsp white pepper
• 1/4 tsp salt
• 2 tbsp chopped parsley
• 1/8 cup veg stock
• 250 ml milk
• 1/2 tsp crushed black pepper
• 1 tsp butter + 3 tsp maida
• 1/8 cup milk (extra)
• 1/8 tsp white pepper
• Pinch grated nutmeg
• 1.5 cups veg stock
• 1.5 tbsp fresh cream
