This is the ultimate blueberry pie. It’s scientifically perfect because all of the components are made individually separately to achieve textural greatness. In all seriousness, this is basically a copycat of an amazing blueberry pie that I had at Her Place Supper Club in Philadelphia a few years ago. And what’s unique about it is that the pie crust and the filling are made separate from each other, which means that you can actually integrate fresh berries right into the pie. The crust is my standard half butter, half lard pie crust that I love. You can make pies of any size with this technique, but the one that I had at her place was served in these kind of like individual pie shells. It was really cute. The filling is simple in terms of flavor, just lemon, raw sugar, and blueberries. But the magic happens by combining both roasted and fresh blueberries into one super complex, texturally exciting filling. And it just wouldn’t be the same without a dollop of soft whipped cream on top. In my mind, this is the ideal late summer dessert. It’s a little bit involved, but I do hope that you give it a try. It’s so delicious.
