    There can, in fact, be too much garlic. Onion on the other hand, not at all.

    The more garlic you can pack into a red sauce, the better. I do one head with the cloves thinly sliced on a mandoline in a sauce for two. They really do melt in, it’s glorious and delicious.

    Someone on Twitter has a “game” where every time she follows a recipe with garlic, she adds bulbs of garlic instead of cloves. She made this recipe, meaning she put in 40 bulbs, which I think she said added up to like 200 cloves. Apparently it was decent tasting but mildly caustic and the house was rank.
