Greek Calamari Fritti – Fried Squid

The Greek classic: calamari! Topped and fried in Greek extra virgin olive oil from Topika! Straight from the family orchards in Crete.

Ingredients:
– 700g squid
– Lemon
– 150g flour
– 60g semolina
– 1 tsp paprika
– Salt and pepper
– Optional: dash of ouzo

Sauce
– 3 tbsp Greek yogurt
– 1 clove garlic
– 3 tbsp extra virgin olive oil
– Lemon juice
– Oregano
– Salt

Other
– extra virgin olive oil for frying
– Lemon juice
– Salt

Recipe:
1. Clean the squid and cut the tubes into 1-1 1/2 cm rings, keeping the tentacles whole.
2. Season the squid with lemon juice and zest, salt, pepper and optionally ouzo. Let it sit for 10 minutes and then drain.
3. Now combine the flour with semolina, paprika, salt and pepper and toss the rings in it.
4. Deep-fry at a maximum of 180-185 degrees Celsius for about 60-90 seconds, or until golden brown and crispy.
5. Drain and season immediately with sea salt.
6. Serve with lemon wedges and the sauce. Enjoy!

We maken calamari. Mijn favoriete Griekse recept. Dat is niet normaal. Eerste inktvis. Kan in ringen. Niet al te dik. Bak in. Deze ook. Met zout. Citroensap. Eno kan je ook weglaten hoor. Eentje dan. Worden ze lekker mals van. Even laten intrekken. Dan het droge jasje. Kort bloem, semolina, paprikapoeder en zout. Kan de inktvis erin goed omscheppen. Alles moet bedekt. De fitur in Grietse olijfolie. Ik gebruik die van Topica. Lekker veel. Zo doen griek je dat is 180° kunnen ze erin. 2 minuten is genoeg. Snel nog even een dip. Griekse yoghurt, wat knoflook, beetje citroensap, oregano, meer griekse olijfolie en zout. Top. Dat zijn ze. Helemaal goudbruin. Huppa. Super simpel. very tast

  1. Para freír en Jaén, Andalucía (España) tenemos garrafas de 5 litros de AOVE que van mejor para echar en la sartén. Las botellas chicas las usamos más para echar o mojar con pan.
