These are some brisket, ribs, chicken, and pork which were turned in for a KCBS comp not too long ago and id like to know what people think of em. It’s tough doing comps sometimes but man its fun, especially when you do good.

    Non competition guy. Everything looks fantastic, except the pork. Long strain has always been= chewy. Against the grain and short strand = tender. Those strands are 2 inches long. I would never in a 100 years serve pulled pork like that.

    How the fuck is that more appealing to judges?

    I think it looks really good. Recommendation on the garnish: wrap green leaf lettuce in Saran Wrap/cling wrap. Slice off 1/2 inch thick discs and place in box. Carefully remove plastic wrap. No more making Kale flowers 🤪

    I mean this as respectfully as possible because it all looks good, but I’m not convinced that some of those aren’t cake and you’re just trying to trick this sub.

  11. My wife got me KCBS judge certification for Father’s Day and I’ve judged in a whopping one competition so far, but in my certified opinion these all look good. I’m a solid 9 across the board. Of course I can’t do taste or texture based on a photo, but I’m willing to bet these score high as well. Nothing below a 7. 
    Interesting choice going for drumsticks for the chicken rather than the thigh “pillows” . Are you doing anything to help the skin be easy to bite through?

    I mean I’m sure it’s good.

    But I can’t get over how nasty competition food always looks. There’s something so wrong with making so right look so sterile and glossy and weirdly arranged.

    A simple pile of the same stuff would look more natural and just better.

  13. Meat looks good, but BBQ just doesn’t look right without butchers paper under it on a metal tray.

    It looks good. I’d like to see more bark in the pork box. We always put six nuggets in there to highlight your work.
    Also, first turn-in I have ever seen with chicken drums.

    I’m curious, though, about the history of the presentation: the perfect squares of chicken thighs, skin scraped of fat then re-wrapped around the meat; legs dunked in an almost artificial, donut-like glaze of a sauce; and the ever-present bed of frilly greens (kale?); and so on and so forth.

    I don’t mean this as an insult, but it’s almost like one of those mock fancy paintings of a very unfancy person in old English frilly clothing, pretending to look all noble and stuff.

    I love it, and I think the food looks good, it’s just always sort of baffled me and been kind of a funny thing to me.
