personally I don’t eat kimchi with my ramen but i usually have a vegetable side dish or pickles or something on the side that I use to cleanse my pallete. most main dishes (like ramen) are pretty heavy so by alternating between a side dish and the main dish, I don’t get sick of the main dish quickly. with some ramen (usually miso based ones) I’ll eat like half and then add chilli powder or sometimes other herbs and spices halfway through to change the flavour and just have more variety soo you could try adding the kimchi halfway through

Wenn it is really good Kimchi, I am in a bit of a desperation, as I am always trying to figure out how to maximize my eating pleasure.
In Gyukaku (牛角) I end up eating more Kimchi than meat. I love Gyukaku Kimchi.

Possibly unpopular opinion, but I tend to eat it with my food. I’ll put it directly in ramen or rice, scrambled eggs etc.
