CRISPY POTATO & BACON SALAD 🥔🥓

Ingredients:

750g baby potatoes
Water for boiling
1 tbsp salt
3 tbsp bacon crumble or chopped
2 tbsp green onions
1 tbsp parsley

For the dressing:
1/4 cup mayonnaise
1/4 cup greek yogurt
1/2 tbsp dijon mustard
1 tbsp lemon juice
1 tsp garlic powder
1/2 tbsp dried dill weed
Salt & pepper to taste

Toppings:
Bacon, green onions, parsley

Today is 95th day before Christmas and we’re making crispy potato and bacon salad with creamy herb dressing. In a pot, add baby potatoes, water, and salt. Bring it to a boil and cook the baby potatoes until fork tender. Now, in a pan, drizzle some olive oil. Add baby potatoes and smash using a glass. Then, drizzle some more of the olive oil. Air fry at 225°C for 20 to 25 minutes. And while we’re waiting, we’re going to make the dressing. In a bowl, add mayonnaise, Greek yogurt, dijon mustard, lemon juice, garlic powder, some dried dill, salt, and pepper to taste. Mix until everything is well incorporated and set aside. After 20 to 25 minutes, our potatoes are now golden and crispy. Add it to a bowl. Then add bacon, green onions, parsley, and our creamy dressing. Toss to mix. And we’re going to top it with more bacon, green onions, and parsley. And there you go. Our crispy potato and bacon salad with creamy herb dressing is ready to serve.
