In this video we show how to make crispy baked zucchini fries with a parmesan breadcrumb coating. Ingredients: 2 medium zucchini, 1 egg, 1/2 cup breadcrumbs (panko for extra crunch), 1/4 cup grated parmesan, 1/2 teaspoon garlic powder, 1/2 teaspoon paprika, salt and pepper to taste, cooking spray. Method: Preheat the oven to 425°F (220°C). Slice the zucchini into sticks. Beat the egg in a shallow bowl. In a separate bowl, mix breadcrumbs, parmesan, garlic powder, paprika, salt, and pepper. Dip each zucchini stick in the egg, then roll in the breadcrumb mixture to coat. Place coated sticks on a parchment-lined baking sheet and spray lightly with cooking spray. Bake for 12-15 minutes, flip, then bake another 5-7 minutes until golden and crisp. Serve with your favorite dipping sauce.
