Okay friends, my name is Erica and I am an early childhood educator and child care center owner. I have been in business for 25 years and I love child care and early childhood and it is always a fun day around here. As you probably hear down the hall is a classroom and they are cheering. They’re doing their morning greetings and all the things. I’m in the kitchen getting ready to start breakfast. And so I thought I would share with you a quick and easy breakfast for little people. Now, if you are a child care center owner or if you have a home daycare, you may or may not be on the child and adult care food program. That is the food program that is administered by the USDA. And that allows child care providers to get a reimbursement for the meals and the snacks that they serve while the children are in their care. It’s a great program. Some people participate, some people don’t. I think it can be really good for a program if you are willing to follow the rules of the program. So today I’m going to show you a credible breakfast. Let’s get into it. Okay guys, so here are the apples that we have. I went shopping the other night. I got some from Aldi. Um, and my children really like apples and at this time of the year, they’re in season in our area. We are in the Midwest and they’re really good, crisp and sweet. So, got those. Some yogurt and then some pancakes. I typically get these, if I do not make them, I get them from Walmart, GFS, Sam’s Club, or Restaurant Depot. It makes it so nice and easy. If you have a busy morning or if you just want to use them, it’s nice to pop them in the microwave and they’re ready in just a few minutes. So, I do my syrup on the side because some of my children don’t like it. They don’t want syrup, but I give it to all of them so that they can say no thank you if they don’t like it. They’ll just put it to the side and they won’t use it. And then I made some yogurt cups. My little people also love yogurt. So, this is a breakfast that they really enjoy. They are pancake people. They love pancakes and waffles. So, I can’t usually go wrong if I give them waffles or pancakes in the morning. And as you see here, this is just a Greek yogurt. It’s blueberry. They like all varieties. They like the blueberry, they like the peach, they like the strawberry. So, once again, they’re not really picky about that. And I can’t go wrong with it. I portion them out into these cups. These are um 4 oz cups. And I divide the yogurt up. Now, when they sit down and eat at the table, we always have seconds available to them because some of my little people eat more than others, and some like some things more than other children. So, I want to make sure that it’s available to them if it’s something that they really enjoy. But I like to start out with their portion sizes the way the CACFP requires it to be plated or to be served. So we make sure we have that available first and then for their seconds. It just depends on how much they want. But we make sure that the right measurements are on the plate when they get ready to eat at the beginning of a meal. So I’m just stirring it up. Make sure that the fruit on the bottom has been incorporated. [Music] And that’s pretty much it. Those are our fruit cups. Now, sometimes I put fruit on top. And then other times I just have the yogurt uh tubes, which my kids really like. They like the yogurt tubes because they typically come with characters on them. Like right now we have some in the in the refrigerator that are Minecraft and so they like those. Oh, and we also have some that are bluey and I think they’re strawberry banana and they’re really easy um to get and grab for the kids, but I typically like to use the tubes at lunchtime just as an extra something that they like. I’m not really looking to make it a part of what I claim as a reimbursement on the CACF. And then we have some apple slices. Now, when they have apples and yogurt, they like to dip their apples, so it’s fun for them. And now, time to plate it all up. I used the small plates this morning, and I didn’t have a really fancy plate. I get these from Dollar Tree. And there you go. So, they each had two pancakes to start out with, and I cut them into squares because these pancakes are for my um twos and young threes. It’s for their classroom. So, some of them still are gobblers. They like to eat really fast and they don’t chew well. So, I make sure for them that a lot of what they have is chopped up. So, you see some of my friends are eating their breakfast. And you see this little guy here put his syrup in his yogurt. And that might not sound appealing to everybody, but guess what? He stirred it up and he ate it. So, it worked for him. So, here’s what we had. We had pancakes, apple slices, yogurt, and a cup of milk. And you know, if you’ve been here before, breakfast was a hit.
