Pumpkin Soup 🎃🍁

whole ingredients + gf + df + creamy + light

🍂Ingredients:
Pumpkin (whole)
Tomato (6 medium)
Ground chicken (2 lbs)
Onion (3)
Chicken broth (one container)
Red bell pepper (1)
Yellow bell pepper (1)
Olive oil
Organic coconut cream (1 can)
Liquid aminos
Sesame oil
Spinach (3-4 cups/preferance)

🧂Spices/Seasonings:
Ginger root
Garlic
Thyme, dried
Rosemary, dried
Nutmeg, ground
Turmeric, ground
Cumin
Black pepper

🔪Preparation:
– chop veg, cover with spices + oil, and fill tray
– chop pumpkin, scrape out the insides, quarter it, cover with spices + oil, and fill the tray

🔥Baking:
– Pumpkin: convect at 400°F for 60min, rotating half way through
– All other veg: bake at 400° for 40min

🥄Post-Baking:
– remove rosemary and thyme
– peel the pumpkin
– blend (in batches) until smooth
– combine all ingredients in a pot with coconut cream

🥘Cook:
– place on low heat
– add in cooked chicken (ground), spinach, and liquid aminos
– simmer on medium heat for 20min

Optional: top with pumpkin seeds or fresh ground turmeric 🧡
