These say use or freeze by 9/12, so they're 2 weeks past that, but they look totally fine to me. I would like to cook them Saturday. What do you say, yay or nay?

Not likely not especially after that long. You can usually get away with a day or two after the date but not a couple of weeks. You’ll find out for sure though when you open them and they smell rancid or have a slimey texture

If it has been in a refrigerator it is fine as long as the cry o vac is sealed. I age briskets for six weeks after date.

As long as this wasn’t temperature abused, it’s fine.
If it smells like warm cultured butter, throw it away.
Trust you’re senses in these situations. If your stomach kinda feels queasy when you smell it. Throw it away. If you see any discoloration or greening, investigate further. If it’s slimy and doesn’t feel right, you know what to do.

Post-date beef? Always. Sometimes it’s even better. Post-date pork or chicken? No way.
