I do it this way too. Way of Ramen turned me onto it. It works great and doesn’t destroy my pasta attachments for the kitchen aid. A little bit of a pain when doing larger batches, but I can’t make rolling it out any easier than the foot method.

This is the standard for trad udon noodles if any one has any form of issue with it look up culture in other countries for food and food standards along with tradition in cooking ….. hell some places have roasted Guinea pig with burn off hair and is usually dusty because of the climate
