The opening of Cassis, a French bistro planned for the ground floor of the 333 Water luxury apartment tower in Milwaukee’s Historic Third Ward, has been delayed.

The restaurant was originally slated to open in the fall, but is now delayed until December due to “routine construction delays,” according to statement from the project’s representatives.

Cassis is a new venture from James Beard-nominated chef Kyle Knall and his wife Meghan, owners of upscale Milwaukee restaurant Birch. The duo announced plans in December to open the riverfront restaurant which will feature seating for 200 guests and serve a variety of French brasserie classics like moules frites, escargots and elements of charcuterie and seafood.

Kyle told BizTimes in early July that the concrete slab was being poured and construction was on track for a fall opening. At the time, plumbing and electrical work in the 5,175-square-foot space was finished with construction to begin on the walls and the kitchen next. No construction updates were provided in the recent announcement of the delay.

In July’s update, Kyle also mentioned that he had so far hired veteran Birch chef Miles Thomas as chef de cuisine and Matt Haase as corporate chef at both Cassis and Birch.
