This is not paella. You should use short grain rice. There should be colour in it, from saffron. A Spaniard would cheerfully throttle you for putting chorizo in a “paella.” Proper meat is chicken and pork, maybe a bit of rabbit.
I think you might want to look for a better recipe if you want to cook actual paella. That said, I imagine this tastes fine as it is.
