Say it with me, no more wimpy salads. And this Greek quinoa salad has all the textures and flavors. We are starting with some cooked quinoa and then adding all the fresh veggies in. Cherry tomatoes and olives and cucumbers, chickpeas and aricho cards, and of course, lots of fresh herbs and creamy feta cheese. The vinegrett couldn’t be simpler. Just whisk together some olive oil, a red wine vinegar, lemon juice, a little honey for sweetness, oregano, salt, and pepper, and drizzle it all over that salad.
