    I wish you all the luck in the world. The recipe that I base my hot sauce on has a fermented version, but I’m afraid I will kill myself by messing it up.

    Good luck! I’d recommend finding different lids next time, those let a lot of oxygen back in. 3 piece/s shaped air locks work better.
