Toppings: sweet onion, green onion, avocado, sesame seeds, spicy mayo, eel sauce
We buy poke nachos often but they’ve been skimping on the fish and raising the price lately, so I decided to make them instead! So delicious and tastes exactly like the one we buy at the restaurant anyway.

Looks good but the roast chicken I just ate is more “sushi” than that.
Looks soooo good! Do you buy “sashimi grade” tuna, or something else? I’m always worried the fish I buy won’t wind up living up to restaurant quality.

I’ve never had poke nachos, but I love aguachile on chips/tostadas which is kind of similar (except the fish is acid-cured).
