Roasted cauliflower couscous
Vegan
Vegetarian
Gluten free
Serves 2 for main coarse
1 medium cauliflower broken into three
1 white onion sliced
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon ground turmeric
1 teaspoon ground sweet red paprika
½ teaspoon chili powder
Salt
Generous drizzle of olive oil
1 large handful baby arugula or baby
mixed leaves
Seeds of one pomegranate
200 gr halved cherry tomatoes
Juice of one lemon
Method:
1. Take two thirds of the cauliflower and cut into small florets.
2. Drizzle olive oil, spices and onion on the florets and mix well.
3. Place baking paper on an oven proof dish and bake in a pre-heated oven on 200 degrees, until crispy.
4. Put the other third of the cauliflower and chop until it becomes small like couscous.
5. In a bowl mix the roasted cauliflower, couscous, halved cherry tomatoes, pomegranate
seeds, arugula, salt , lemon juice and drizzle of olive oil.
Your salad is now ready…Enjoy!
