    Pan needs to be hotter, you need to cook it in oil not water, it has no crust.

    Salt that steak up like an hour before you cook it, leave it covered in salt at room temperature then use a paper towel and dry it off- apply a bit more salt + pepper and cook that fucker til you got a beautiful crust

    The temp looks good on the steak, and I love some runny egg yolks. I do think the steak could benefit from a crust to help elevate the flavor. That’s what cooking is all about: Making the dish better than last time until you have perfected your method. What matters is if YOU like it!

    I admire your persistence! The temp on that steak looks good. For the sear make sure you pat the steak dry and/or get the temp of the pan up. All preference, but that looks tasty.

    Hotter pan, pat steak dry before seasoning, salt will bring moisture to the surface.
