This place only opened in June, but honestly I’d be surprised if they don’t get their first Michelin star this year. Food is already that good. Second star in year two wouldn’t surprise me either.
• Amuses: lobster with ginger beer & orange, red beet with foie gras & cherry, Wagyu, and bluefin tuna with passion fruit & smoked eel → all excellent.
• Courses: Norwegian salmon with Granny Smith, red mullet with mango & coconut, venison with pistachio & cherry → refined, creative, and perfectly balanced.
• Cheese trolley: strong selection, but weirdly not offered.. had to ask when they already served desserts.
Now the real issue → premium wine pairing (and yes, the pairings themselves were spot on with the food):
• Keller Riesling von der Fels — €40 retail
• Rudi Pichler Grüner Veltliner 2017 — €52
• Villahuercos Rioja — €36
• Meursault Domaine Michelot — €80 (half glass)
• Barolo “Serradenari” DOCG 2020 — €74 (half glass)
• Szamorodni Tokaji 500ml — €16
Total: €230 for 5 glasses + 2 halves.
That’s a x6 markup. For context:
• x3 = standard at Michelin level
• x4 = high but still defensible
• x6 = plain cash grab
So my question to this sub: what do you consider a fair uplift on wine at fine dining restaurants? Do you accept x3–x4, or should x6 be called out as daylight robbery?
Perhaps this is more common in USA, but in NL or Western Europe.. I was quite shocked. For completeness, I reached out to check, they confirmed an uplift of x6 for their wines.

If the option is there I always bring from my cellar. I don’t need to pay someone 4x or more for the privilege of opening a wine I may or may not enjoy.
3x is just wrong. Standard wine markup, almost everywhere, is 4-5x. 5x on cheaper loss leaders, 4x for the rest. 6x is high for sure but not unheard of
Don’t go after a restaurant for having high wine prices.. wine has always been super overpriced at restaurants, it is what it is and it’s certainly not breaking news. You had 9/10 food.. that’s freaking awesome!
