[Homemade] Airline Chicken Schnitzel au Poivre

    Tonight’s dinner. An Airline Chicken Schniztel au Poivre.

    Look, I know the purests are already sharping their pitchforks with this so-called “Schnitzel”.

    It already isn’t veal and I’m not in Austria so….

    It’s a pounded thin airline chicken breast. A heritage breed bird as well. Can’t beat it.

    Simple seasoning on the breast. Salt, black pepper, and white pepper. Seasoned flour. Egg. Panko (I know, not traditional).

    The “au poivre” is shallot, chicken stock, white miso for umami, brandy (fine girl), toasted black pepper, green peppercorns lemon juice and heavy cream.

    Lemon is lemon.

    Schnitzel, chicken cutlet, Milanese…it’s all good.

    You supreme that breast well. I hated when I had to peel back the damn membrane/skin on a case of pork chops or airline breasts. Thankfully no longer doing that and it isn’t so bad if you just have to do it for you and friends/family or maybe a dog that looks on rather confused.
