Hey guys! Quick “pantry cooking” meal prep because I didn’t have time to grocery shop before my usual prep day. I figured this will hold us over until I do a full meal prep on Monday.

This is probably my favorite batch of spaghetti that I’ve ever made! Here’s how I made it:

Ingredients

  • 1/2 box (8 oz dry) thin spaghetti

  • 24 oz marinara sauce

  • 1/2 lb ground beef

  • 1/2 lb ground mild Italian sausage

  • 1/2 cup breadcrumbs

  • 2 tbsp milk

  • 1/4 cup grated Parmesan

  • 1 egg

  • 1 tsp garlic powder

  • 1 tsp dried parsley

  • 1 tsp italian seasoning

  • 1/2 tsp salt

  • 1/2 tsp pepper

Steps

  1. Preheat oven to 400°f for meatballs. For noodles, start by boiling 6 cups of water in a saucepan with a little bit of salt, add noodles when it comes to a rolling boil. Follow box instructions for timing (I did 10 minutes)

  2. In a medium bowl combine breadcrumbs and milk. Then add the grated Parmesan and seasonings. Mix together and then add the ground meat & egg. Mix until just combined

  3. I like to cut my meatballs cut up before putting them in my spaghetti, so I used an ice cream scoop to make 10 large meatballs and baked them on a baking sheet with parchment paper for 20 minutes (until 165° internal temp). Alternatively you could make 15-20 smaller meatballs with a cookie scoop and bake for a shorter amount of time. Just be sure to check the internal temperature!

  4. Now your noodles should be done, so drain the water add about 1 cup of sauce to your noodles in the saucepan. Mix together and put noodles into meal prep containers. Now you should have an empty saucepan. Add the remaining sauce to it over low heat. Season with garlic powder, Italian seasoning, and parsley if desired. I also added onion powder and oregano just for fun!

  5. Once your meatballs are cooked, pat the grease off of them and put them in the marinara sauce. After 10 minutes or so I removed them and cut them up, spooned the marinara from the pan over the pasta, and then added my cut up meatballs to the pasta. Enjoy!

Hope this meal prep inspired someone today! It was thrown together last minute from pantry + freezer ingredients so I’m very happy it turned out so delicious.

    Spaghetti and meatballs are my easy go to meal. Only difference is that I always make the tomato sauce myself. It doesn’t take much longer and it’s fairly easy.
